This week, Roy was having a group of friends over for a chat. He would not need a proper meal, or even any particular baked things, but he thought it would be nice to have a dip which people could snack on. Of course, this also gave him the opportunity to try out a recipe he had seen and wanted to make - Lentil Dip. The resulting dip was delicious, and a great hit with his friends. So this week, Roy Creates Deliciously Spiced Lentil Dip.
You Will Need:
- 250 grams of dried red lentils
- 25 grams of butter
- 1 onion
- 4 teaspoons of curry powder
- 3 tablespoons of tomato paste
- 1 teaspoon of lemon juice.
Method:
- Start by cooking the lentils. First rinse them thoroughly, and then put them into a pot with 500 millilitres of water. Cook the lentil as the packet directs until the water is pretty much absorbed, and they are soft and can be mashed.
- While the lentils are cooking, very finely chop the onion
- Melt the butter in a small frying pan, and add the onion.
- Cook the onion until it is soft, then add the curry powder and fry off until it is fragrant
- Add the tomato paste and fry off a little, until it is well combined with the onion, and slightly cooked.
- Add the onion mix to the mashed lentils and stir
- Add the lemon juice and stir until everything is well combined
- Transfer to a dish and chill until ready to serve.
- This is great as a dip, but Roy also recommends it as a spread with a sliced egg on toast!
