This week, with Australia Day approaching, Roy decided it was a perfect opportunity to try out a recipe he discovered amongst a pile of scrap pieces of paper. The recipe was for a popular Australia Day favourite, Lamingtons, yet it was also quite different to the norm which most people are familiar with. Indeed, instead of being single lamingtons, the recipe is for a Lamington Cake, which Roy thought sounded very interesting indeed. Roy thought it would be perfect for Australia Day, and so thought he would share the recipe with his online friends. So this week, Roy Creates Lamington Cake for Australia Day.
You Will need:
- 1 cup of castor sugar
- 125 grams of butter or margarine
- 1/2 a cup of milk
- 1/2 a teaspoon of vanilla essence
- 1 cup of self raising flour
- 2 eggs
- 3 level tablespoons of custard powder
- Chocolate Icing and desiccated coconut to decorate
- Optional: Add an extra 1/2 a cup of self raising flour and sultanas and cherries
Method
- Preheat the oven to 180 degrees and line a square cake tin
- Melt the butter in a large bowl
- Add everything else
- Beat for 3 minutes
- Pour into tin and bake for 40 minutes
- Cool and ice with chocolate icing and sprinkle with coconut
