This week, Roy wanted a quick and delicious lunch for a hot day to share with a friend who had let him know she was calling in around lunchtime that day. In the heat, Roy loves chilled soups, and one of his favourites is Gazpacho. He finds that making a Gazpacho from raw ingredients though can take a little too much time, especially when he has unexpected guests coming! Luckily, he has a quick and easy version which is absolutely delicious, but takes next to no time to whip up. So this week, Roy Creates A Cheeky Cheat's Quick And Easy Gazpacho.
You Will Need:
Note: There are no amounts below, because you can make as much or as little as you like of this recipe. Just adjust the ratio of juice and yoghurt to suit your taste.
- Vegetable juice with a base of tomato. Roy likes to use the hot and spicy V8 juice, but if you don't like chilli, go for whatever you prefer!
- Natural or Greek Yoghurt
- Tomato, cucumber, celery and capsicum to serve.
Method:
- Roughly chop the tomato, cucumber, celery and capsicum, and mix them together in another bowl.
- In a bowl, mix together the juice and yoghurt. Roy finds he likes about 1 tablespoon of yoghurt to a cup of juice, but adjust to taste.
- Chill the soup until you need to serve.
- To serve, fill a bowl with the soup, and add a generous amount of the fresh vegetables for texture and crunch.
