This week, Roy decided that he had a hankering to cook a delicious dinner. When he has some time in the afternoon, Roy loves to make a delicious dinner, and he checked out the cupboard and garden for inspiration. He noticed a large tin of tuna in the cupboard, and found some lovely herbs in the garden, so decided it was a perfect opportunity to make a tuna cakes. Roy loves tuna cakes, and particularly appreciates how simple and straightforward they are to cook so he decided it was time to share the recipe. So this week, Roy Creates Simply Delicious Tuna Cakes.
You Will Need:
- 4 to 5 large potatoes
- Large tin of tuna (Roy prefers tuna in olive oil, but whatever is your favourite will be fine)
- Fresh parsley to taste. Roy used a large bunch from his garden!
- 3 or 4 spring onions or small leeks. Roy used 4 small leeks from his garden.
- The juice of ½ a lemon
- 1 egg
- 3 gherkins
- 1 dessertspoon of capers
- Breadcrumbs for coating (Roy used Panko breadcrumbs)
Method:
- Start by peeling and chopping your potatoes into chunks. Put these in a pot of salted water and boil until they are cooked.
- While your potatoes are cooking, chop your parsley. Roy used a small food processor to chop the herbs finely.
- Chop your spring onions or leeks finely. If you are using leeks, add them to the potatoes a near the end of the cooking time, just to soften them up a little.
- Finely chop the gherkins and capers
- Drain your tuna and set aside
- Drain your potatoes and mash them with a potato masher
- Add the tuna to the potatoes and mix.
- Add the chopped gherkins, capers, and parsley
- Add the lemon juice
- Season with salt and pepper to taste
- Lightly beat the egg in a small bowl with a fork, then mix into the potato and tuna. This will help your patties stick together
- Form the mix into patties. Roy made 8 patties, and put some aside for lunch the next day.
- Toss each patty in the breadcrumbs
- Heat a frying pan to medium heat and add the patties to the pan (Roy used a non-stick pan, so he did not need to add oil). Fry until golden brown, and then turn and cook through on the other side. The patties should be golden brown and the filling should be hot and firm.
- Serve with salad and enjoy!
