This week, Roy wanted to make something which one of his friends has been asking him to make for ages. Roy and many of his friends love fried chicken, but they aren’t so fond of the greasiness, or fat which is involved when you fry chicken. Roy knew his grandma had a recipe for a baked fried chicken which would be much more healthy, and he promised to share the recipe with his friend, but then, he admits, he forgot all about it. He came across the recipe recently, and remembered his promise, so decided to share the recipe. So this week, Roy Creates Deliciously Crispy, Oven Fried Chicken.
Note: you need to start this recipe 24 hours before you want to cook the chicken
You Will Need:
For the chicken
- 9 chicken drumsticks
- 1 cup of buttermilk
- 1 large clove of garlic, finely chopped
- 1 teaspoon of bittersweet paprika (if you don’t have bittersweet, sweet will be fine)
- Cayenne pepper to taste
- The juice of ½ a lemon
- 1 teaspoon of mixed herbs
- Salt and pepper to taste
For the crunchy crust:
- 3 cups of cornflakes
- ½ a teaspoon of garlic powder
- 1 teaspoon of mixed herbs
- Cayenne pepper to taste
- Salt and pepper to taste
- 1 teaspoon of sweet paprika
- 1 tablespoon of grated parmesan
Method:
- Mix together the buttermilk, garlic, paprika, cayenne pepper, lemon juice, herbs, salt and pepper. Pour over the drumsticks and marinade. Roy has a meat marinading container, but you could do it in a bowl, or even in a really sturdy ziplock bag.
- Mix the chicken around in the marinade a few times during the next 24 hours
- Preheat the oven to 200 degrees celcius
- Crush the cornflakes so you have cornflake crumbs
- Mix the garlic powder, cornflake crumbs, herbs, salt, pepper, cayenne pepper and sweet paprika together
- Pour some of the crumb mix onto a flat plate or shallow bowl and toss the chicken drumsticks to coat. Roy did the drumsticks one at a time, and pressed the crumbs in to thoroughly coat them
- Put a rack into a baking tray so the drumsticks are raised up, and then put the drumsticks onto the rack. Spray the drumsticks with a little cooking oil
- Bake for 40 to 45 minutes, or until the drumsticks are cooked
- Enjoy!
- You can use the leftover crumb mix to crumb potato wedges to have with your chicken if you like, but make sure any crumb mix and marinade you don’t use on the day is thrown away!
