This week, Roy needed to make something delicious for a friend who was coming for a meeting. This friend love fruit and loves chocolate, so Roy was hoping to find something which combined the two in a deliciously sweet treat. He also noticed he had a lot of broken sweet biscuits in the biscuit tin, so he was hoping to use those up too. Then, he came across a slice recipe which had it all, broken biscuits, glace cherries, crystalised ginger, chocolate bits – it was perfect. What’s more, it even freezes, so he could keep some aside for friends who might visit unexpectedly! So this week, Roy Creates Chocolate And Fruit Broken Biscuit Slice.
You Will need:
- 250 grams of plain sweet biscuits. Roy used up all those broken bits in the biscuit tin (including a few gingernuts)
- 125 grams of margarine
- ¾ of a cup of chocolate chips. Roy used dark chocolate as it is his favourite, but use whatever you like best!
- ½ a cup of slivered almonds
- ½ a cup of chopped glace cherries
- ½ a cup of chopped crystallised ginger
- 2 cups of shredded coconut
- 1 tin of condensed milk (400 grams)
Method:
- Preheat the oven to 180 degrees and line a lamington tin with baking paper
- Crush up all the biscuits – Roy did this in a food processor
- Melt the margarine and mix into the broken biscuits. Press the biscuit mix into the bottom of the tin.
- Mix together the almonds, cherries, ginger and chocolate and spread over the biscuit base.
- Sprinkle the shredded coconut evenly over the chocolate, fruit and nut layer.
- Pour the condensed milk evenly over the coconut
- Bake for about 30 minutes or until the slice is golden and delicious.
- Cool in the tin
- Cut into squares and store in an airtight container. You can also freeze some for those unexpected guests.
