This week, Roy decided he had a hankering for some sort of delicious, chewy slice. Roy loves to cook any sort of food, but slices are one of his favourite things to make as they are so easy, and so delicious. He remembered seeing a recipe in one of his cookbooks for a Date and Caramel Slice with Chocolate Icing and thought this sounded absolutely scrumptious. Indeed, the results were so good that the slice didn’t last long before it was all eaten up. So this week, Roy Creates Chocolaty Date and Caramel Slice.
You Will Need:
- 125 grams of margarine
- ½ a cup of sugar
- 1 cup of coconut
- 1 cup of self raising flour
- A pinch of salt
- 1 cup of chopped dates
- 2 tablespoons of golden syrup
- 1 cup of icing sugar
- 1 dessertspoon of butter
- 1 dessertspoon of cocoa powder
- ½ a teaspoon of vanilla essence
Method:
- Line a slice tin with baking paper and preheat the oven to 170 degrees celcius
- Mix together the sugar, coconut, flour, salt and dates.
- Melt the margarine and golden syrup together (you can do this in the microwave, just be careful not to burn it)
- Add the golden syrup mix to the dry ingredients and mix together
- Press into the tin and bake for 30 minutes or until golden and cooked
- In the last few minutes of cooking, make the icing by mixing together the icing sugar, butter, cocoa and vanilla until smooth. You may need to add a little hot water to make the icing the right consistency.
- Spread the icing over the slice while the slice is hot. Roy also sprinkled his slice with coconut
- Allow to cool and then cut into squares.
