This week, Roy decided he wanted to make a savoury treat for a friend who was coming for morning tea. Roy often makes delicious sweets, but he was interested in making something a little bit different on this occasion as he knows this friend loves savoury treats. He remembered reading an interesting recipe for cheese biscuits in a stack of recipes he had recently come across and thought these might be just the thing. They were absolutely delicious when we made them, and although there were plenty to go around, they didn’t have great keeping qualities – they were gobbled up quickly! So this week, Roy Makes Scrumptiously Savoury Cheesy Biscuits.
You Will Need:
- 120 grams of plain flour
- 180 grams of wholemeal plain flour
- 1 level teaspoon of salt
- Cayenne pepper to taste
- 1 level teaspoon of dry mustard powder
- 120 grams of margarine
- 120 grams of grated cheese (Roy used a tasty cheddar, but you could use parmesan if you preferred)
- Juice of ½ a lemon
- A little water to mix to a dough
- Extra butter (melted) and salt to finish the biscuits
Method:
- Preheat the oven to 180 degrees Celsius and line biscuit trays with baking paper
- Sift together the flours, salt, cayenne pepper and mustard powder. Throw away any large pieces of husk left in the sifter when you finish sifting.
- Sift twice more, throwing away big pieces of husk
- Add the margarine and rub the margarine into the flour (or use a pastry cutter, like Roy used)
- Add the cheese and rub into the mix (or again, use a pastry cutter)
- Add the lemon juice and enough water to mix into a reasonably dry dough (it needs to be rollable)
- Roll very thinly (about 4 millimetres thick) and cut into rectangles, approximately 2 centimetres wide and 5 centimetres long. You may need to dust the dough with flour
- Brush with melted butter and sprinkle with salt
- Bake for 8 minutes, or until golden and cooked through
- Cool on a cooling rack and store in an airtight container
