This week, Roy decided he should share a recipe which a number of his friends have recently been requesting. Roy loves making delicious meals, and one of his favourites is a healthy and delicious Asian noodle salad. This salad is completely gluten, peanut and dairy free, and can easily be made vegetarian, and best of all, the children Roy knows really enjoy it. At their request, he thought he would share the recipe, which is adapted from a recipe in the Mediterrasian Way Cookbook (by Ric Watson and Trudy Thelander). So this week, Roy Creates A Deliciously Healthy Asian Noodle Salad.
You Will Need:
- Rice noodles. You can use other noodles if you prefer, just prepare according to the packet directions
- Chicken thighs (or you could use precooked chicken, or any other meat you like – or of course leave it out completely)
- Carrot
- Chinese greens – Roy used Bok Choy
- Capsicum
- Spring onions
- Celery
- 5 tablespoons of Soy sauce
- 3 tablespoons of Chinese rice vinegar
- 1 teaspoon of sugar
- 1 teaspoon of sesame oil
- 1 and ½ tablespoons of grated ginger
- Chilli and garlic to taste. Roy used a whole red chilli, added to the dressing.
Method:
- Start by chopping up the carrot, capsicum, spring onions, and celery. Put them into a big bowl, large enough to toss the salad in
- Make the dressing by combining the soy sauce, Chinese rice vinegar, sugar, sesame oil and ginger. Stir to combine
- Bring a pot of water to the boil and suspend a colander inside with the chicken thighs. Steam the thighs until they are fully cooked and then chop the meat up and add to the vegetables. You can cook the chicken any other way you like if you prefer.
- Chop up the Chinese greens and suspend them above the water to steam, removing as soon as they are cooked and putting them in the bowl with the other vegetables and chicken
- Put the noodles into the water and cook according to the packet directions.
- Put the noodles into the bowl, along with some of the dressing. You will probably not need all of the dressing, so use what suits your tastes.
- Toss everything to combine and serve warm!
