This week, Roy decided he would like to create something quick and delicious which could be enjoyed on a picnic. Roy loves picnicking with his friends and family, and is always looking for interesting and tasty dishes to take. When his Uncle asked if he would make a vegetable slice for a picnic, like his Grandma used to make, Roy loved the idea and immediately asked her for the recipe. As is often the case, the recipe wasn’t written down, but together, Roy and his Grandma managed to work it out so that we could share the recipe. So this week, Roy Creates Scrumptious Savoury Vegetable Slice.
You Will Need:
- 2 large zucchini
- 1 large carrot
- 1 large onion
- A small can of corn, drained
- A few rashers of bacon or some ham (Roy used 3 rashers of bacon)
- 1 cup of self raising flour
- 1 cup of cheese, plus extra for sprinkling
- 6 eggs
- ½ a cup of vegetable oil or olive oil
Note: You can add whatever other vegetables you like. Roy would usually add a capsicum but his Aunt doesn’t like it so he left it out. If you want to make it vegetarian, just leave out the ham or bacon. Mix and match to your own tastes!
Method:
- Preheat the oven to 180 degrees celcius and line a lamington tray with baking paper
- Grate the zucchini and carrot into a large bowl
- Finely chop the onion and add this and the corn
- Chop the bacon and add to the vegetable mix along with the cheese and eggs.
- Stir until everything is combined
- Add the flour and stir thoroughly
- Finally, mix in the oil
- Spread the mix in the tin and top with a little extra grated cheese
- Bake for 30 to 40 minutes or until cooked and fully set
- Cut into squares and enjoy
You can eat this slice warm from the oven, but it is equally nice cold, and perfect for picnics or even school lunch boxes!
