This week, Roy was heading off to visit his Great Grandfather and he wanted to take a scrumptious treat to tantalise the tastebuds. Roy’s Great Grandad is very into sweet, syrupy flavours and Roy recalled seeing a recipe in a collection given to him by his Aunty Isobel for honey buns. He remembered that they had brown sugar and lots of honey in them and thought they might be just the thing. The results were absolutely scrumptious, just as the recipe promised – light and moist cakes with a delicious honey flavour. So this week, Roy Creates Light And Scrumptious Honey Bun Cakes.
You Will Need:
(Roy doubled this recipe to make 18 cakes, but this amount makes just 9 patty cake sized buns)
- 90 grams of self raising flour
- A small pinch of salt
- 60 grams of butter or margarine, softened
- 30 grams of brown sugar
- 1 egg
- 2 level tablespoons of runny honey. Use whatever honey you like best as this is the dominant flavour of the cake!
- Optional – blanched or slivered almonds to decorate
Method:
- Preheat the oven to 180 degrees celcius and line 9 patty cake tins with papers
- Put all of the ingredients, apart from the almonds, into a bowl
- Beat for 2 or 3 minutes until the mix is thick and smooth. If you like, you could do this with electric beaters, but Roy had no problem doing it by hand with a big wooden spoon
- Distribute the mix between the patty tins
- If you like, press a blanched almond into the top of each cake, or sprinkle with a few slivered almonds
- Bake for 15 minutes or until they are golden and firm to the touch
- Cool and store in an airtight container
- Enjoy!
