This week, Roy decided with Christmas coming up, he wanted to make something delicious which could be packaged up and given away as gifts. Roy enjoys making presents for the people he loves and thought he would try out a biscuit which promised to be tasty and fun – Sunbeams. He had never seen a recipe or heard of sunbeams before, but just loved the name of the biscuits and also thought they looked very tasty – and indeed they were. So this week, Roy Creates Jam and Coconut Sunbeam Biscuits.
You Will Need:
- 125 grams of sugar
- 60 grams of butter or margarine
- 1 egg
- 2 tablespoons of milk
- 250 grams of self raising flour (approximately – the recipe asks for ‘enough self raising flour to make a stiff dough’ and Roy found that it took 250 grams)
- A pinch of salt
- Desiccated coconut
- Jam – Roy used strawberry.
Method:
- Cream together the butter, sugar and a pinch of salt.
- Add the egg and milk and beat together
- Add the flour, a little at a time, and mix until you have a stiff dough. You may need more or less than Roy used.
- Roll the dough out on a floured surface, trying to shape the dough into a rough rectangle. Roy rolled half the dough at a time as he found this was easier.
- Spread the dough with jam and sprinkle with coconut
- Roll the dough up into a log and wrap in clingwrap. Roy made 2 logs.
- Set the dough aside in the fridge for at least an hour to chill
- Preheat the oven to 180 degrees celcius and line biscuit trays with baking paper
- Put a little coconut into a bowl, ready for tossing the biscuits
- Sprinkle a clean, dry surface with coconut and lay one of the unwrapped logs on top of the coconut. Sprinkle more coconut over the top of the log.
- Cut the log into slices about 1 centimetre thick and toss in coconut to coat
- Place the sliced biscuits onto the trays (Roy found he could put about 12 to a tray) and bake for about 15 minutes or until the coconut is golden brown.
- Cool the biscuits on a cooling rack and store in an airtight container.

Note: if the biscuits become soft because of the humidity, these can be rebaked at a low temperature until they crisp up again.
