This week, with the weather heating up and people planning barbeques and picnics, Roy decided it was time to share another tried and true family recipe. Whenever Roy is asked to bring a salad for a picnic or gathering, it always seems to be his potato salad, which his Grandma taught him to make which is requested. Roy loves potato salad, but his friends and family seem to think his version is particularly special. He decided that perhaps he should share this recipe with his online friends. So this week, Roy Creates Grandma's Quick and Simple Potato Salad.
You Will Need:
- Potatoes – use as many as you think you will need to feed your group. As Roy doesn't peel the potatoes use washed potatoes or desirees
- Mayonnaise – use good, whole egg mayonnaise for the best flavour
- Herbs – Roy uses lots of fresh mint and parsley, but you can use other herbs if you like. He likes to add basil when he has it to hand.
- Onion – Roy uses about one large onion to approximately 1 kilogram of potatoes
- Salt and pepper to taste
Method:
- Start by preparing your potatoes. You do not need to peel them, but remove any suspicious looking lumps or breaks in the skin. Cut them into bite sized pieces
- Boil the potatoes in salted water until they are cooked, but not too soft (if they are too soft they will fall apart when you stir in the other ingredients)
- While the potatoes are boiling, chop the herbs and onion. Roy usually does this with a little food processor, but you can do it by hand if you like.
- Drain the potatoes and return them to the large saucepan.
- While the potatoes are hot, add the herbs, onion and mayonnaise. The amount of mayonnaise you will need will depend on the amount of salad you want.
- Add salt and pepper to taste and mix everything together.
- Taste and add more mayonnaise, herbs, onion or seasoning to taste
- Put the salad into a serving bowl and put it in the fridge to cool and for the flavours to mature.
