This week, Roy decided with the children heading back to school, he should create something delicious as a coming home treat. The children Roy knows all love chocolate chip cookies, and Roy thought perhaps a new version to add to the range available might be great. He found a recipe which was similar to the toll house cookies which are so popular, but had a few key differences in quantities and ingredients, resulting in a delicious, but different, biscuit. With a chewy, soft centre and plenty of chocolate too, he thought they would be perfect. So this week, Roy Creates Deliciously Chewy Chocolate Chip Cookies.
Note: This recipe includes nuts, but they can easily be omitted if you want a nut free biscuit.
Ingredients:
- 175 grams of plain flour
- ½ a teaspoon of baking powder
- ¼ of a teaspoon of salt
- 125 grams of butter or margarine, softened
- 60 grams of brown sugar
- 90 grams of caster sugar
- Vanilla essence to taste
- 1 egg
- 125 grams of chocolate chips (Roy used dark, but use whatever you like best)
- 30 grams of chopped nuts (Roy used pecans, but you can use whatever you like, or leave them out)
Method:
- Preheat the oven to 190 degrees celcius and line biscuit trays with baking paper
- Put the butter, brown and caster sugar, vanilla, egg, chocolate chips and nuts (if using) in a bowl and mix until well combined.
- Mix together the flour, baking powder and salt and add to the other ingredients
- Mix until well combined
- Scoop heaped teaspoons of the mix onto trays (Roy put 9 to a tray)
- Bake for 10 to 12 minutes or until golden and delicious smelling
- Transfer to a cooling rack and allow to cool completely
- Store in an airtight container and enjoy
