This week, Roy wanted to cook a quick and delicious slice which he could enjoy as a sort of healthy snack when he was out and about. When Roy is out investigating new places he sometimes becomes a little hungry, but he doesn’t want something heavy. When he saw a chocolate flapjack recipe in one of his old cookbooks he thought it might be perfect. With oats, nuts and a small amount of chocolate chips it sounded delicious, but not too unhealthy. In fact, it was rather like we might now call a muesli bar. The resulting slice was really tasty so he decided to share the recipe. So this week, Roy Creates Simply Scrumptious Chocolate Chip Flapjacks.
You Will Need:
- 125 grams of butter or margarine
- 125 grams of brown sugar
- 1 tablespoon of golden syrup
- 175 grams of rolled oats (do not use quick cooking oats because the texture will be all wrong!)
- 60 grams of chocolate bits. Roy used dark chocolate because it is his favourite, but if you prefer milk that will be fine.
- 60 grams of roasted and skinned hazelnuts. If you can’t buy them pre-roasted, put them on a tray and roast them in the oven until their skins crack. Pour them into a clean tea towel, wrap them up and rub them around to remove the skins.
Method
- Preheat the oven to 180 degrees celcius and line a 28 by 18 centimetre slice tin with baking paper
- Chop the hazelnuts. Roy did this in a little food processor.
- Melt the butter. Roy did this in the microwave, just be careful not to burn it!
- Add the brown sugar and golden syrup to the melted butter and stir to combine
- Add the oats, chocolate and chopped hazelnuts and mix until everything is well combined
- Spoon the mix into your prepared tray and use the back of a spoon to flatten and press the oats together
- Bake for 25 to 30 minutes or until the slice is golden and delicious smelling
- Score the slice while it is hot. The slice easily cuts into 14 bars or 15 squares
- Allow the slice to cool in the tin and then cut along your score lines and store in an airtight container
