This week, Roy wanted to make some biscuits to give away to a few friends who he thought needed something delicious to nibble on. He wanted a recipe which would be easy, make lots of biscuits and taste delicious, so he set about finding the perfect thing to try. He came across a recipe in one of his old cookbooks for honey gingernuts which looked promising, so he decided to give it a go. Not only were they easy to make, his friends can’t stop nibbling at them, and what’s more the recipe made well over 100 biscuits! As long as you aren’t allergic to nuts, these biscuits make the perfect gift so Roy decided to share the recipe. So this week, Roy Creates Spectacularly Tasty Honey Gingernuts.
You Will Need:
- 1 cup of honey
- 1 cup of sugar
- 250 grams of butter
- 1 egg
- 2 teaspoons of baking powder
- 1 tablespoon of ground ginger
- 1 cup of plain flour
- 1 cup of chopped nuts (Roy used chopped peanuts, but sees no reason why you couldn’t try different nuts. He thinks almonds would probably be pretty tasty!)
Method:
- Preheat the oven to 180 degrees and line biscuit trays with baking paper
- On a plate, measure out the flour, ginger and baking powder, gently mix together and set aside. Measure out the nuts and put them in a bowl. This also means you won’t need two cups to measure the honey and dry ingredients
- Melt the butter (you can do this in the microwave if you like, but be careful not to burn it)
- Mix together the honey, sugar and egg, then add in the butter, stirring all the time to avoid scrambling the egg.
- Add the flour mix and the nuts and stir until everything is combined. You want a mix which will drop from a spoon, but if it is too runny, add a little more flour.
- Drop small lumps of dough onto the trays. Roy tried a teaspoon, but the biscuits spread too far and were too big, even with only nine to a tray. He decided a half teaspoon (a lump of dough about the size of a marble) was just right.
- Bake for 8 to 12 minutes, depending on how big you make your biscuits. You want them golden brown. Allow them to harden slightly on the trays before transferring to a cooling rack (they will be very soft when you first take them out of the oven)
- Store in an airtight container and enjoy.
