This week, Roy decided he wanted to share the recipe for an old fashioned, delicious sandwich filling which he has always enjoyed. In days gone by, sandwich spreads were often homemade and they were also usually very economical! One of the commonly used spreads was mock chicken. ‘Mock’ foods really originated during World War Two, when rationing meant that many things were not easily available and so substitutes had to be found. Don’t expect this to taste like chicken (though it slightly resembles creamed chicken) – but it is absolutely delicious. So this week, Roy Creates Old Fashioned Marvellous Mock Chicken.
Note: This is a vegetarian sandwich spread, but Roy also enjoys it with a little fried bacon (and it is particularly delicious spread on toast, topped with bacon and a little more cheese and grilled).
You Will Need:
- A tablespoon or so of butter or margarine
- 1 tomato.
- A small onion (or half of a large one)
- 1 teaspoon of mixed herbs
- 1 cup of grated cheddar cheese
- 1 egg
- Bread to serve
Method:
- Start by peeling your tomato. To do this, cut a cross in the skin at the bottom of the tomato and immerse it in boiling water until the skin is loose (not long at all, perhaps 30 seconds)
- Finely chop the tomato and onion
- Fry off the onion in the butter until it is soft and then add the tomato.
- When the tomato has softened and started to break down, add the herbs
- Add the cheese and stir until it melts – don’t let it boil (if it boils the mix will curdle)
- Add the beaten egg and stir for a minute or until cooked.
- If you like, add some salt and pepper (Roy thought it was fine as it was)
- Allow the spread to cool in the fridge before using.
- Spread on sandwiches or try Roy’s grilled cheese and bacon mock chicken!
