This week, Roy decided he wanted to make a spectacular lunch. With winter upon us, lots of his friends have been enjoying hot sandwiches for lunch, so Roy decided to look for a spectacular old recipe which would raise the toastie to a new level. He thought about doing a croque monsieur, but when he came across a recipe for something similar, but perhaps even grander, he thought this would be just the thing. So this week, Roy Creates An Enormously Delicious Monte Cristo Sandwich.
You Will Need: (these quantities make one sandwich, if you want to make more, multiply as needed. However, Roy found one sandwich fed two for lunch easily!)
- 3 slices of bread (Roy used a delicious wholemeal, but traditionally the sandwich should be made with white bread, crusts removed)
- 2 slices of cheese, to fit the bread
- 2 slices of ham
- 2 slices of chicken (ideally you will use leftover chicken from a roast, but chicken loaf will be fine too)
- 1 egg
- 1 dessertspoon of milk
- Salt and pepper to taste
- Butter or margarine for buttering bread and frying
Method:
- Start by buttering one slice of bread.
- Top this bread with a layer of chicken, then cheese and another layer of chicken on top
- Butter both sides of the second piece of bread and place this on top of the chicken layer
- Top this bread with a layer of ham, then cheese, then another layer of ham
- Butter the last slice of bread and place it, buttered side down on the ham layer
- Whisk the egg, milk, salt and pepper with a fork
- Preheat a frying pan over medium heat and add the butter or margarine, allowing it to melt
- While the pan is heating, cut the sandwich into halves (Roy cut triangles as he thinks they look attractive)
- Dip each piece into the egg mix, making sure to cover all sides
- Fry the sandwich (Roy found it easiest to do one half at a time), making sure all surfaces are given a chance to brown and crisp (and making sure the egg is cooked)
- Serve with cranberry sauce or red currant jelly and enjoy!
- If you served this with a salad it would easily make a simple main meal
