This week Roy was in need of something simple but delicious to take to a buffet he was contributing to. He wanted something luxurious, but not too difficult to make, and also wanted something which people would really enjoy. It also needed to be something he could make a few days before they were needed, as he was very busy. So, he looked through his cookbooks for something suitable. When he came across a recipe for ‘chocolate logs’ he thought they would be perfect – and they were! So this week, Roy Creates Simply Scrumptious Chocolate Logs.
You Will Need:
- 2 and ½ cups of plain flour
- ½ a teaspoon of salt
- 250 grams of softened butter
- ½ a cup of icing sugar
- 2 teaspoons of vanilla essence (Roy used extract, but whichever you use, you will need 2 teaspoons of it!)
- 1 and ¼ cups of rolled oats
- Dark chocolate to dip the finished biscuits in. Roy used about 250 grams and this was more than enough for all the biscuits
Method:
- Preheat the oven to 180 degrees Celsius and line 2 baking trays with baking paper
- Cream the icing sugar, butter and vanilla until you have a smooth and creamy mix.
- Add the flour and rolled oats and mix. Roy suggests that you will need to use your hands to mix, at least at the end, and notes that it may look like the dough is not coming together, but keep working it and things will all work out!
- Roll pieces about the size of an unshelled walnut into logs and place them on the baking trays. Roy ended up putting 15 on each tray, and had three trays worth in total
- Bake for 20 to 25 minutes or until the biscuits are golden brown
- Allow the biscuits to cool completely
- Melt the chocolate and dip the end of each biscuit. You will have half the biscuit covered in chocolate and half the biscuit plain.
- Allow the chocolate to set and then transfer to an airtight container
- Enjoy!
