This week, Roy wanted to try out a recipe from one of the recipe books in our old cookbook collection. He wanted something interesting, with a fabulous flavour and without too much sugar so that his diabetic friends could have a little piece. We flipped through recipes until we came across a recipe for ‘Nigger Toes’. We weren’t sure what these could be, but the name stopped us in our tracks (and please note, Roy doesn't agree with or condone this name). We decided to give them a try for history’s sake and were pleasantly surprised by the biscuit we finished with. We couldn’t use that name though, so we have renamed these delicious biscuits. So this week, Roy Creates Deliciously Tasty Toe Biscuits.
You Will Need:
- 120 grams of self raising flour
- ½ a teaspoon of sugar
- 60 grams of butter
- 60 millilitres of water
- A pinch of salt
For the filling:
- Sultanas
- The finely grated rind of 1 lemon
- Extra butter
- Brown sugar to taste
Method:
- Preheat the oven to 180 degrees celcius and line one biscuit tray with baking paper
- Mix together the sugar, flour and salt
- Add the butter and use the very tips of your fingers (or a pastry cutter like Roy used, if you have one) to rub it into the dry ingredients. You want the mix to look like breadcrumbs.
- Add enough water to mix into a stiff dough
- On another piece of baking paper, roll the dough into a rectangular piece about ½ a centimetre thick. The baking paper will help when you need to roll the mix up.
- Sprinkle the dough with sultanas, sugar and lemon rind (use as much as you like. Roy used about ¾ of a cup of sultanas, the rind of a lemon and a generous tablespoon of sugar in total)
- Dot the dough with small pieces of butter (Roy used perhaps a tablespoon of butter in total)
- Roll the dough up. To do this, Roy used the baking paper to help lift the dough and folded it over and over until he had a nicely rolled piece of dough.
- Place the roll, seam side down, onto the baking tray. If you like, you could sprinkle a little sugar over the dough before baking. Roy didn’t, but thinks it would be delicious!
- Bake the roll (uncut) for 15 minutes or until nice and golden
- While hot, use a very sharp knife (wielded by an adult) to carefully cut the roll into biscuits.
- Cool, store in an airtight container and enjoy.
