This week, Roy decided he would like to create one of the recipes from the Biscuit Cookbook which was our tingle factor item earlier this week. The cookbook was created by The Central Council Of The Women’s Auxiliaries for the NSW Society For Crippled Children, and is full of interesting recipes which Roy was itching to try. When he came across a recipe for ginger cookies though, he thought this would be great as his Grandpa loves ginger so would enjoy the results – and enjoy he did! So this week Roy Creates Ginger Biscuits With History.
You Will Need:
- 120 grams of butter
- 60 grams of sugar
- 1 cup of self raising flour
- 1 teaspoon of ginger
- 1 egg
Topping
- 3 tablespoons of icing sugar
- 2 tablespoons of butter (you can use margarine but butter is better if you have it)
- 1 teaspoon of ground ginger
- 3 teaspoons of golden syrup
Method:
- Preheat the oven to 180 degrees celcius and line a small slice tray with baking paper
- Cream together the butter and sugar
- Add the egg and beat in
- Add the flour and ginger and mix into a firm dough
- Press into the tin and bake for 20 minutes or until golden and crisp
- Five minutes before the base finishes cooking, put all the ingredients for the topping into a small saucepan and melt together until very hot, but do not boil
- Pour this mix over the hot slice and allow to cool
- When the slice is cold cut into fingers and enjoy
