This week, Roy was looking for a delicious cake which might be able to double as a breakfast food in a pinch. Roy was heading away for the weekend, and we would need to have a quick and easy breakfast on the go, so he wanted a bread or loaf which would not be too unhealthy. When I suggested this ridiculously easy raisin loaf which his Aunty Jill had shared with me, he thought this sounded just the thing. So this week, Roy Creates Deliciously Easy Raisin Loaf.
Note: You can easily make this a date loaf, just substitute the raisins for roughly chopped dates.
You Will Need:
- 1 and ½ cups of raisins
- ½ a cup of chopped walnuts
- 1 cup of sugar
- 2 tablespoons of margarine
- 1 rounded teaspoon of baking soda
- 1 cup of boiling water
- 1 cup of self raising flour
- 1 cup of plain flour
- 1 egg, lightly beaten (with a fork)
Method:
- Preheat the oven to 140 -150 degrees (depending on how hot your oven is) and line a loaf tin with baking paper
- Sift together the flours
- Mix together the raisins, walnuts, sugar, margarine and baking soda
- Pour over the boiling water and mix until the margarine is melted and the baking soda fizzes.
- Add the flours and egg
- Mix thoroughly
- Pour into the loaf tin
- Bake for about 40 minutes to 1 hour or until a skewer inserted into the centre of the cake comes out clean
- Cool, store in an airtight tin, cut into slices and enjoy (with or without a light spread of butter)
