This week, Roy decided that with school starting up again, he would like to make a treat which would be perfect for school lunchboxes. We went through several old cookbooks looking at recipes, but when we came across a scrap of paper with a recipe for ‘Oat Bar Cookies’ on it, Roy decided it would be perfect. These bars are vaguely related to muesli bars, and are completely nut free, so they are suitable for nut free schools. So this week, Roy Creates Delicious Oat Bar Cookies.
You Will Need
- 125 grams of butter
- 1/2 cup of brown sugar
- 1/4 of a cup of white sugar
- 1 egg
- 1 teaspoon of vanilla essence
- 3/4 of a cup of flour
- 1/2 a teaspoon of baking soda
- 1/2 a teaspoon of cinnamon (or other spice of your choice)
- 1 and 1/2 cups of rolled oats
- 1/2 a cup of sultanas (you could use any other dried fruit you liked though)
Method:
- Preheat oven to 180 degrees celcius and line a lamington tray with baking paper
- Cream the butters and sugar
- Add the eggs and vanilla and beat well
- Sift in the flour, baking soda and cinnamon and mix thoroughly
- Stir in the oats and raisins
- Transfer to the lamington tray and spread out
- Bake for 30 to 35 minutes or until the biscuits are golden brown
- Cut while hot
- Allow to cool in the tray
- Store in an airtight container and enjoy
