This week, Roy wanted to make something delicious, but quick and easy. Although over Christmas and New Year he has had plenty of opportunity to cook and eat, almost all his baking has been devoured already, and he has friends coming for morning tea. He needs something to add to his spread. He remembered a recipe he had seen some time ago for coconut and apricot kisses, which he was very curious about (he wasn’t sure it would work!) and decided to give them a go. They were delicious. So this week, Roy Creates Amazing Coconut And Apricot Kisses.
You Will Need:
- 1 cup of chopped dried apricots
- 1 and ¼ cups of shredded coconut
- 1 teaspoon of vanilla essence
- 1/3 of a cup of condensed milk
- Optional: chocolate to dip the coconut and apricot kisses in. Roy used dark chocolate
Method:
- Cover the dried apricots with boiling water and allow them to stand for 30 minutes
- Preheat the oven to 180 degrees celcius and line baking trays with baking paper.
- Drain the apricots very well.
- Combine the apricots, coconut and vanilla and stir well.
- Add the condensed milk and mix thoroughly, until everything is wet and sticky.
- Roll heaped teaspoons of the mix into balls. If the mix isn’t holding together add a little more condensed milk. Roy’s was fine without any extra.
- Bake for 20 minutes or until golden.
- Allow the kisses to cool completely on an airing rack
- If you like, melt the chocolate and carefully dip the top of each kiss. Be careful not to squeeze the kisses as they are a bit fragile.
- Roy put his kisses into patty cases to store and serve, but it is not necessary.
