This week, with Christmas nearly here, Roy wanted to create something quick, easy and delicious which could be given away to his friends as a small gift. He was looking through his Grandma’s Christmas cookbook when he found this well thumbed recipe. He asked her about it and she said ‘it is a recipe from your Aunty Pam and it is delicious – give it a go’, so he did and was very pleased with the results. With Christmassy fruit and nuts, chocolate and caramel, and all dressed up in Christmas colours, with a dusting of snow, Roy has seldom seen anything more Christmas looking. Best of all, it tasted delicious. So this week, Roy Creates Festive Christmas Slice.
You Will Need:
- 1 and ¾ cups of plain flour
- ½ a cup of icing sugar
- 2 tablespoons of cocoa powder
- 250 grams of butter, chopped and slightly softened
- 30 grams of butter (additional, for topping)
- 1/3 of a cup of castor sugar
- 1 tablespoon of milk
- 1 teaspoon of vanilla essence
- 1/3 of a cup of sultanas
- 100 grams of multicoloured cherries, chopped
- ¼ of a cup of walnuts, chopped
- Extra icing sugar to dust
Method:
- Preheat oven to 200 degrees celcius and line a lamington tray (28 by 18 centimetres) with baking paper
- Sift together the flour, icing sugar and cocoa powder.
- Rub in the softened butter until you have a fine and crumbly mix.
- Press the mix into the tin and bake for 10 to 15 minutes.
- Take it out of the oven and reduce the temperate to 180 degrees celicius
- Melt the 30 grams of butter and add the sugar and milk. Stir them together until they are dissolved.
- Add the vanilla essence, sultanas, cherries and walnuts and stir together
- Spread this topping over the base and cook for a further 15 to 20 minutes.
- Cool in the tin
- Dust the cold slice with extra icing sugar ‘snow’. Roy did this after he had cut it, and just before serving, or packaging as gifts.
