This week, Roy had a request to fulfil. Many of his friends love making slices, and one of the most popular is chocolate peppermint slice. There are many recipes for this old favourite, but one of his friends wanted ‘the real old fashioned version’. So, Roy went through his old cookbooks and found one recipe which appeared several times. He decided this must be ‘the classic’ and the results were delicious. So this week, Roy Creates Good Old Fashioned Chocolate Peppermint Slice.
You Will Need:
- 1 and ½ cups of self raising flour
- 1 cup of desiccated coconut
- ½ a cup of brown sugar
- 185 grams of butter or margarine
- 2 cups of icing sugar mixture
- 60 grams of copha (peppermint layer) plus 90 grams of copha (for chocolate layer)
- 2 to 3 tablespoons of milk
- 1 teaspoon of peppermint essence
- ½ a cup of drinking chocolate
- 1 teaspoon of instant coffee
Method:
- Preheat the oven to 180 degrees celcius and line a slice tray with baking paper.
- Mix together the coconut, brown sugar and flour
- Melt the butter and mix into the dry ingredients
- Press the mix into the slice tin and bake for 15 to 20 minutes or until the mix is a golden brown
- In the last 5 minutes of cooking the base, melt the 60 grams of copha.
- Mix together the melted copha, peppermint essence, icing sugar and milk. Spread over the hot base
- Allow the slice to cool.
- When the slice is cold, melt the last 60 grams of copha and mix with the coffee and drinking chocolate.
- Spread the chocolate icing over the peppermint layer and allow to set.
- When the slice is cold and all layers are well set, remove from the tin, cut into squares, store in an airtight container and enjoy. In hot weather you will need to keep the slice in the fridge or it will soften!
