This week, with the Melbourne Cup just around the corner, Roy wanted to create something suitable to celebrate the famous horse race. He looked at all sorts of recipes, but felt like being creative, and wondered if he could somehow make little hats, like the women famously wear to the race. His Grandma, as always, had the answer, giving him a scrappy piece of paper from years ago which provided directions for making hat biscuits. He tried out the recipe and thought the result not only tasted great, but was fantastic looking and a lot of fun to make and decorate. So this week, Roy Creates Hat Biscuits For Melbourne Cup.
Note: this recipe makes about 2 dozen hat biscuits
You Will Need:
- A packet of plain round biscuits. Roy used Marie Biscuits
- 1/3 of a packet of copha
- 1 cup of icing sugar
- Vanilla essence to taste
- 1 packet of pink and white marshmallows
- Things to decorate your hats with. You can use lollies, silver cachous, coloured sugar decorations – whatever you like!
Method:
- Carefully melt the copha in a small bowl. Copha takes a while to melt, but is easy to burn so make sure you check it regularly, especially if you are melting it in a microwave!
- Add the icing sugar and vanilla essence to the copha and stir until you have a smooth icing
- Spread a thin layer of icing onto a biscuit and press a marshmallow into the centre to make a ‘hat’
- Now, decorate the hat however you like! You need to decorate the hats as you make them or the icing will set and you won’t be able to stick your decorations on.
- Repeat until you have used all of the icing.
- Store your hats in an airtight container
- Enjoy!
