This week, Roy was entertaining and he wanted a nice, refreshing drink to serve to people because it was quite warm. Usually, he would make a big bowl of punch, but there weren’t enough people to make it worthwhile, so he looked through his recipes for something else to try. When he came across this recipe for Lemon Minty Refresher he thought it would be perfect. The results were fantastic, so this week Roy Creates Lemon Minty Refresher.
You Will Need:
- 1 and a ½ cups of water
- ½ a cup of sugar
- 6 tablespoons of lemon juice (about 150 millilitres)
- 1 tablespoon of very finely chopped mint (plus some sprigs to serve)
- 1 large bottle of lemonade or soda water
Method:
- Put the sugar, water and mint into a saucepan.
- Bring to a boil, stirring occasionally. As soon as the mix reaches a boil, remove it from the heat and set aside to cool and infuse.
- When the mix is cold, add the lemon juice
- Strain the mix to remove the mint and pour the mix into a jug or bottle. Set aside until you are ready to use it.
- When you are ready to use the mix, add chilled lemonade and enjoy. If you are keeping the cordial for a few days, store it in the refrigerator.
Note: you could also use ginger ale to make the lemon and mint mix up, depending on what you prefer!
