This week, with Saint Patricks Day nearly here, Roy wanted to make something which would be appropriately Irish for the day. There are many Irish recipes which Roy loves, especially Colcannon and Champ. One he had not heard a lot about though until recently was Boxty. Roy has an Irish friend who told him that if he enjoyed the Colcannon and Champ he might like Boxty too, so of course he had to give it a go and what better time to do it than for Saint Patricks Day! So this week, Roy Creates Delicious Boxty.
You Will Need:
- 3 or 4 large potatoes
- Salt and pepper to taste
- 1 egg
- 1/3 of a cup of plain flour
- Milk (up to ¾ of a cup)
- Butter for frying in
Method:
- Start by peeling your potatoes.
- Boxty uses two different sorts of potato. You need to grate half of the potatoes with a box grater and put them in a strainer to drain thoroughly. Add a little salt to help draw out the excess liquid. Before you use them in the recipe you need to squeeze out as much liquid as you can.
- The rest of the potatoes will be boiled and mashed, so chop them up, cook them in salted water and then mash with a little milk.
- Add the grated potatoes to the mashed potatoes.
- Add salt and pepper to taste, the flour and enough milk to make a good batter consistency. The mix needs to be able to drop from a spoon, but shouldn’t be soggy.
- Melt butter in a frying pan and drop spoonfuls of the boxty mix into the pan. Fry until golden on one side and set enough to turn. Flip the boxty over and cook on the other side until golden. It will take about 3 to 4 minutes per side, depending on their thickness and the type of potato you are using. You need to cook them for long enough to cook the raw potato. If you want to make lots of Boxty (and this recipe makes quite a few) you can brown them in the pan and then tranfer them to the oven to finish cooking. Roy finished his on the Barbeque!
- Serve hot. Roy enjoyed some of his with salad and sausages, but had some of the leftovers heated up with smoked salmon and sour cream, which was also very tasty. You can have yours however you like!
