This week, Roy wanted to make something fun. He has been craving a little decoration, but also something sweet and started going through his recipes to see what emerged. When he discovered a recipe for ‘Money Faces’ pulled out of some old book, it seemed too good to resist. He tried out the recipe for when his cousin Toby was coming to visit and the results were spectacular! The biscuits were not only delicious when made, they were cute too and Roy just had to share them with his online friends. So this week, Roy Creates Monkey Faces.
You Will Need:
- 1 cup of plain flour
- 1 cup of self raising flour
- ½ a teaspoon of salt
- 1 egg
- 125 grams of butter
- 2/3 of a cup of caster sugar
- Coconut to sprinkle
- 1 tablespoon of icing sugar mixed with enough water to make a glaze
- large and small round biscuit cutters, or use a glass and ingenutiy to cut the holes.
- Raspberry jam for sandwiching
Method:
- Preheat the oven to 150 degrees celcius and line baking trays with baking paper.
- Cream the butter and sugar together. You can use electric beaters, or do it by hand.
- Beat in the egg
- Sift the flours and salt together over the butter mix and mix until it forms a firm dough.
- Knead on a lightly floured surface until the dough is smooth and then roll out to a 5 millimetre thickness.
- Cut large circles out of the dough and set half of them on the trays to bake for 15 minutes. To do this, Roy rolled the dough out on one sheet of baking paper, with another sheet covering the dough. He then peeled the circles of dough off the baking sheet like a sticker. This kept the circles in their original shape as the dough is sticky and you want to roll them reasonably thin.
- With the other half the circles, cut three holes out (for eyes and a mouth).
- Brush these circles with the sugar glaze and sprinkle with coconut. Bake for 15 minutes.
- When the biscuits are cold sandwich them together with raspberry icing.We did this as they were needed, allegedly to stop the biscuits from going soggy but Roy thinks it might have been so they didn't all disappear too quickly!
