This week, with Australia Day coming up Roy decided he wanted to create
something which was in keeping with the day. Roy loves passionfruit and
they are in season around Australia Day. They are also a very Australian
fruit because everybody used to have a passionfruit vine growing on
their back fence. Roy's Grandma told him that, when I was little, she
made cordial from the passionfruit we grew and was happy to share the
recipe. Roy was really pleased with the result and thought it would be
perfect to take on an Australia Day picnic, so wanted to share the
recipe. So this week Roy Creates Grandma's Passionfruit Cordial.
You Will Need
- The pulp of 10 large passionfruit. If your passionfruit is small, use 12 instead.
- 2 cups of sugar
- 2 and a half cups of boiling water
- 2 teaspoons of citric acid
- Fill the kettle and set it to boil while you prepare the rest of the ingredients
- Cut the passionfruit in half and scoop the pulp and seeds into a large bowl
- Add the sugar and citric acid to the passionfruit
- Ehen the kettle boils pour the water over the passionfruit, sugar and citric acid mixture
- Stir until all the sugar has dissolved
- Leave the mix to cool completely
- Pour the cordial through a strainer to remove the seeds and pulp. You need to leave the pulp and seeds to drain for extra time to get the last bits of cordial.
- Use a funnel to pour the cordial into a bottle (Roy just used an old softdrink bottle he had washed out)
- Store the cordial in the fridge and enjoy!
- This cordial can be made up with water, soda water, lemonade or mineral water. It is quite strong though, so adjust to taste!
