Recently, Roy has been doing quite a bit of entertaining, which has given him lots of opportunity to try new recipes. Some of the recipes he has been trying out have been very old ones, handed down in the family, while others have been given to him by friends or were even just collected over the years. All have languished, waiting to be tried and tested. This coffee cake was one of the recipes Roy has been meaning to try and he is glad he did! So this week, Roy Creates Delicious Coffee Cake.
You Will Need:
- 2 eggs
- 2 tablespoons of melted butter or margarine
- 1 cup of flour
- 1 teaspoon of cream of tartar
- 3/4 of a cup of caster sugar
- 3 tablespoons of cold milk
- 1/2 a teaspoon of bicarbonate of sofa
- 1 and 1/2 teaspoons of coffee essence
Method:
- Preheat the oven to 190 degrees celcius and line a lamington tin with baking paper
- Sift the flour and bicarbonate soda together into the bowl and add the rest of the dry ingredients. Mix all the dry ingredients together.
- Mix together the milk, melted margarine, eggs and coffee essence
- Pour into the dry ingredients
- Mix well (Roy beat the mix for about 3 minutes)
- Bake for 25 to 30 minutes or until the cake is cooked
- Ice with mocha icing made with icing sugar, a knob of butter, coffee essence, a dessertspoon of cocoa and enough hot water to make a paste.
- If you like you can sprinkle with chopped walnuts to add a bit of crunch, or put little round chocolates on each piece to decorate.

- This cake freezes well
