This week, Roy wanted to make a sweet treat for some of his friends. He was having a group of them to afternoon tea and wanted something delicious to contribute. He also had some time on his hands, so he thought it would be a perfect time to try one of those recipes he has been putting off as potentially ‘tricky’. This slice was one of them and while delicious, it was a little fiddly to make – but well worth it. So this week Roy Creates Churchill Slice (and no, Roy doesn't know the story behind the name - if you know, please drop us a line!)
- 125 grams of butter
- 125 grams of sugar
- 125 grams of self raising flour
- 1 egg
- 1 tablespoon of cocoa
- ½ a teaspoon of vanilla
- 1 cup of coconut
- 1 tablespoon of icing sugar
- 1/3 cup of milk
- Chocolate icing and coconut to ice
Method:
- Preheat the oven to 180 degrees and line a lamington tray
- Cream together the butter and sugar
- Add the egg and vanilla and beat
- Sift the flour and cocoa together and add to the mix.
- Spread half of the chocolate mix on the bottom of the tray
- Mix together the coconut, icing sugar and milk and spread over the chocolate mix in the tray.
- Spread the rest of the chocolate mix over the coconut layer
- Bake for 20 minutes or until cooked
- When cold, ice with chocolate icing and sprinkle with coconut
- Cut into squares and enjoy.
- Note: this slice can be frozen successfully
