This week, Roy was looking for a delicious biscuit he could take along to an afternoon tea he was helping to cook for, but he was a little short on time. He loves to bake and will happily potter in the kitchen, but just didn't have the time for a time consuming recipe. It had to be ready in as short a time as possible. He remembered a quick mix shortbread he had seen written into his Grandma's Cookbook and asked if she thought this would be worth a try. It was delicious, so this week, Roy Creates Quick And Tasty Lemon Or Vanilla Melt And Mix Shortbread.
You Will Need:
- 250 grams of margarine
- 2 tablespoons of castor sugar
- 2 tablespoons of icing sugar
- 2 tablespoons of cornflour
- 2 and 1/4 cups of plain flour
- A flavouring. You can make these shortbread either lemon or vanilla. Just add either a teaspoon of lemon zest, or a teaspoon of vanilla essence.
Method:
- Preheat the oven to 180 degrees and line a lamington tin
- Melt the margarine carefully in the microwave, making sure not to burn it
- Sift together the icing sugar and 2 types of flour.
- Add the castor sugar and mix
- Here, you need to decide what flavour to use. Either stir the lemon rind into the flour, or the vanilla into the butter
- Make a well in the dry ingredients and pour the butter mix in.
- Mix thoroughly (you may need to knead the dough a little with your hands) and then press into the tin.
- Cut the slice into fingers and prick with a fork before putting it in the oven
- Bake for 25 to 30 minutes.
- Carefully lift the slice out of the tin while it is hot (you will need an adult to help) and recut any pieces which have stuck together. If you let the slice cool it will be impossible to cut up.
- Cool the slice and then store in an airtight container.
