This week, Roy decided it was time to try a recipe he was given some time ago by his Auntie Marie. Auntie Marie makes marvellous almond biscuits topped with chocolate and she kindly gave Roy the recipe. He has been waiting for the perfect time to make these biscuits and when he learned that some special friends of his were planning to drop by, he thought this would be the perfect time to have a go. After all, these are a very special treat as they aren't the cheapest biscuit to make. The recipe is very simple though and makes delicious biscuits and so he decided to share them with you. So this week, Roy Creates Auntie Marie's Chocolate Topped Almonds.
You Will Need:
- 250 grams of almonds. Roy used flaked, but you could use slivered.
- 1 egg white
- 1/4 of a cup of caster sugar
- 1 tablespoon of lemon rind
- 1 tablespoon of honey
- 2 tablespoons of self raising flour
- Melted dark chocolate for topping
Method:
- Preheat the oven to 120 degrees celcius and line baking trays with paper
- Beat the egg white until soft peaks form.
- Add the sugar and beat until it is dissolved
- Add the almonds, lemon rind, flour and honey
- Stir well
- Place dessertspoons of the mix on the trays you prepared
- Bake for about 20 minutes or until they are light golden in colour
- When the biscuits are cool, top the biscuits with melted dark chocolate. Roy just spooned his on.
- Store in an airtight container and enjoy! This recipe makes about 24 biscuits.
