Recently, with the weather being so cold and windy, Roy has been feeling like some good, old fashioned food. He had heard me talk about a pie his Grandma used to make when I was little, but which I hadn't had in years and was very intrigued by it. The pie doesn't use pastry as its crust, but instead uses sausage mince, and this was an idea which Roy loved. The question was, could Grandma remember the recipe? Luckily, she had some idea about what to do, and after some trial and error, we had a delicious, old fashioned Winter warmer. So this week Roy Creates Grandma's Sausage Pie.
You Will need:
- 500 grams of sausage mince
- 1 onion, finely sliced into rings
- 1 teaspoon of dried thyme
- A little olive oil
- 1 apple, peeled, cored and chopped
- 150 millilitres of milk
- 2 eggs
- Grated cheese to top the pie with
Method:
- Preheat the oven to 180 degrees and lightly spray a pie dish with cooking oil.
- Fry the onion and thyme in a little oil until soft and caramelised.
- While the onion is frying, press the sausage mince into the pie dish. You want to line the pie dish with the mince, just like you would with pastry.
- Spread the onion over the sausage mince and then sprinkle the apple over.
- In a bowl, beat the eggs and milk together with a fork. Season with salt and pepper to taste
- Pour the egg and milk mix over the onion and apple, filling the sausage mince crust with the mix.
- Sprinkle with grated cheese.
- Bake for 30 minutes or until the sausage mince is cooked and the egg and milk mix are set.
- You can enjoy this pie hot or cold. Don't worry if your sausage mince shrinks and the egg and milk flow over the edge of the crust - it might not be as pretty, but it tastes great anyway!
