This week, Roy was doing some entertaining. He loves having friends over, and cooking delicious things to share with them. The problem was, he wasn't sure if these friends were coming for lunch or for afternoon tea, so he needed something savoury which would be suitable for both. He asked his Grandma to help him find something, and together they went through the old cookbooks until they came across what looked like the perfect recipe, a savoury slice. The problem was though, it called for sausage mince and somehow this seems to have become a gourmet item which needs to be ordered in advance. A few alterations later, the savoury slice was ready to eat and it was delicious. Roy was so impressed with it he decided to share it with you (in fact it was so good, it was all eaten before I had a chance to photograph the finished product!) So this week, Roy Creates pork, apple and sage savoury slice.
You Will Need:
Note: you can use sausage mince, if you can get it, or substitute your favourite type of mince and adjust the seasonings and flavours! Roy likes the slice made with sausage mince as it has just a little more flavour.
- Shortcrust pastry
- 500 grams of pork mince
- 1 finely chopped onion
- 1 cup of rolled oats
- 1 grated apple
- 1 teaspoon of dried sage
- Salt and pepper to taste
- 2 eggs
- 1 tomato, finely chopped
- 2 sticks of celery, finely chooped
- 2 slices of bacon, finely chopped
- 1 cup of cheese, grated
Method:
- Preheat the oven to 180 degrees celcius and line a lamington tin with baking paper.
- Cut the pastry so that it fits in a single layer over the bottom of the tray. You may need to join a couple of pieces together, and to do this you just need to wet your fingers and press the joins together.
- In a bowl, mix the mince, sage, apple, oats, onion, salt and pepper and one of the eggs. It is easiest to use your hands to mix the mince.
- Press the mince out in a layer over the pastry.
- In the same bowl as you used before mix together the second egg, celery, bacon and tomato. Spread this mix over the mince mixture
- Sprinkle the cheese over the top of the slice and bake for 45 minutes or until the slice is cooked.
- Serve hot or cold as a savoury nibble for afternoon tea or with salad for lunch. It is even perfect for a picnic!
