This week, with the cold weather once again upon us, Roy decided he wanted to make something warming. He loves classic 'comfort food', but didn't have the time to put together something complicated which took a long time to cook. He really wanted something quick, easy and delicious which tasted like it had been cooking for hours and hours. He decided to have a look at some of the old cookbooks his Grandma has, and found a recipe which promised to be quick and easy, but what would it taste like? It was a slightly odd recipe, but he decided to give it a try. When it was cooked, it turned out to be delicious, so Roy thought he would share the recipe with you. So this week Roy Creates One Pot Chicken And Rice Casserole.
You Will Need:
- 8-10 chicken drumsticks
- 1 cup of rice. Roy used Basmati because it's his favourite, but it should work with any rice you want to use.
- A can of condensed Mushroom Soup. If you don't like mushrooms, you could use Cream Of Chicken, Asparagus, Celery or something similar.
- 1 packet of dry French Onion Soup Mix
- 1 onion. If you have a leek or two, you can use these instead, like Roy did.
- 1 spring onion
- 2 stalks of celery
- 2 and 1/2 cups of milk
- Salt and pepper to taste
Method:
- Preheat the oven to 180 degrees and grease a ceramic baking dish
- Finely chop the celery, leek or onion and spring onion
- Mix together the milk and the Mushroom and French Onion soups in a bowl.
- Add the salt and pepper, celery, leek, spring onion and rice and mix.
- Pour into the greased baking dish.
- Sit the drumsticks in the top of the rice mix
- Bake for 1 hour or until the rice and chicken are cooked.
- Serve with salad or vegetables and enjoy!
