This week, Roy decided it was time to share with his online friends an easy, incredible recipe. Roy loves old fashioned recipes which work every time, and which are easy to make, and thinks that they are often more flavoursome than modern, fiddly recipes. Best of all, they usually come together really quickly with minimal effort. One of his favourites is the aptly named 'impossible pie'. This lime and coconut impossible pie makes a delicious dessert, but looks like it will never work when you put it into the pie dish. Have no fear though, it creates a luscious dessert. So this week, Roy Creates Lime And Coconut Impossible Pie.
You Will Need:
- The zest of 2 limes and 1/2 a cup of lime juice. You can use lemons if you don't have any limes available.
- 60 grams of softened butter or margarine (this is 2 imperial style tablespoons)
- 1/2 a cup of self raising flour
- 3/4 of a cup of castor sugar
- 3/4 of a cup of dessicated coconut
- 3 large eggs
- 1 and a 1/2 cups of milk
Method:
- Grease a pie dish and preheat the oven to 180 degrees.
- Combine all of the ingredients, other than the milk, in a large bowl and use a balloon whisk to mix them together until the mix is smooth. You can use an electric whisk or electric beaters to speed the process up, like Roy did.
- Whisk in the milk.
- Pour the mix (which will look very runny, and a bit like pancake batter, but don't worry!) into the pie dish
- Bake for 50 minutes to an hour. You'll know it is cooked when a knife inserted in the centre comes out clean.
- Let the pie sit for 10 minutes to set.
- Cut and enjoy! It is great served with ice cream
