This week, Roy needed to make an afternoon treat, in a real hurry. He had promised to make afternoon tea for some of his friends, but when he went to cut the slice he had made, it just hadn't worked. He had made it loads of times, but for whatever reason, it was a disaster, and he needed to make something else. There was only one choice, a quick and easy slice recipe which one of his Grandma's friends, Pam had shared many years ago. It makes a beautiful, cakey slice which everybody loves, and it is ready in a less than an hour - including cooking time! So this week, Roy Creates Speedy, Cakey, Fruit Slice.
You Will Need:
- 1 cup of self raising flour
- 1 cup of castor sugar
- 1 cup of dessicated coconut
- 125 grams of butter or margarine
- 1/2 a cup of glace cherries
- 1/2 a cup of sultanas
- 2 eggs
Method:
- Line a lamington tin and preheat the oven to 180 degrees celcius.
- Mix the flour, sugar and coconut in a large bowl.
- Chop the cherries up (Roy likes to chop them into quarters)
- Add the cherries and sultanas to the dry ingredients and mix them around.
- Melt the butter in the microwave, being careful not to burn it.
- Mix the melted butter into the dry ingredients.
- Lightly beat the eggs in a small bowl (just to break them up) and mix them into the rest of the ingredients
- Press the mix into the lamington tin and bake for 30 minutes or until golden and a skewer inserted in the middle comes out clean
- Allow to cool, cut into squares and enjoy!
