This week, with the weather being so cool, Roy felt it was good weather for a nice creamy casserole. Roy loves the smell of casseroles and bakes cooking, and of course the taste! He also loves how easy they are to make, but knows that many of his online friends use ready-made sauces or packets or casserole mix. He thinks this is a shame, because they are so easy to make, so decided to share one of the easiest, which was given to him by his friend Anne, with you. So this week, Roy Creates Chicken Myer.
You Will Need:
- 4 to 6 chicken breasts or thighs. Roy likes thighs, because he thinks they have more flavour. You can also use leftover, cooked chicken.
- 1 onion
- 4 teaspoons of yoghurt (the original calls for cream, but Roy likes the tang of yoghurt and doesn't use cream very often)
- 1 tin of condensed cream of chicken or mushroom soup (or other, appropriate creamy condensed soup)
- 4 tablespoons of mayonnaise
- 1 teaspoon of curry powder
- 1 heaped cup of grated cheese
- 2 cups of mixed frozen vegetables, thawed (at least enough to break up)
Method:
- Preheat the oven to 190 degrees celcius.
- In the bottom of an oven proof dish, spread the vegetables in an even layer.
- Chop up the chicken and the onion, and fry off in a little oil until the chicken is cooked and the onion is soft. Roy used leftover, cooked chicken, so he skipped the frying off stage and just mixed the raw onion with the vegetables
- Spread the chopped chicken over the top of the vegetables.
- In a bowl, mix together the mayonnaise, yogurt, soup and curry powder. Pour over the chicken in an even layer
- Sprinkle the cheese over the top.
- Cook the casserole for 40 minutes or until the cheese is browned.
- Serve the Chicken Myer with rice or pasta and enjoy!
