This week, Roy has been doing a bit of impromptu entertaining. He loves having people over for meals, but also likes to have something tasty to offer, yet sometimes when people come over on short notice, he has very little time to make something. He wanted to make a nice, light dessert, but didn't have time to set jellies or mousse, so he asked his Grandma if she had anything in her cookbook which he could use. She suggested an old recipe she had for a berry dessert using cream, tinned berries and fresh strawberries. When he made it, Roy thought it was great, so this week Roy Creates Quick And Easy Berry Dessert.
You Will Need:
- 1 punnet of strawberries
- 1 can of mixed berries or strawberries in natural juice
- 2 to 3 tablespoons of castor sugar (to taste)
- 300 millilitres of whipping cream
- Vanilla essence to taste.
Optional: A drop of orange oil gives the cream a nice lift, but it is great on its own too.
Method:
- Roughly chop 1/3 of the fresh strawberries into small pieces. Put them aside.
- Drain the can of berries. You can save this juice to make up an extra tasty jelly at another time.
- Whip the cream with the sugar and a little vanilla essence until the cream holds soft peaks. If you are using orange oil, add it in with the vanilla essence.
- Add the drained berries and beat the cream a little more until it is quite firm and the berries are broken up and mixed through.
- Add the chopped strawberries to the mix and fold them through.
- Spoon the cream into glasses or bowls and set it in the fridge to firm up.
- Slice the remaining strawberries and put them on the top of the cream before serving. We also used fresh blueberries and orange slices to decorate.
