This week, with New Year being just around the corner, Roy decided it was the perfect time to enjoy a picnic dinner. Roy loves to go into the city to see the New Year's Eve fireworks and he knows that lots of his friends also love to watch them. Some of his friends like to take a picnic to enjoy, and so Roy wanted to share an easy, delicious picnic dessert with his online friends. Vanilla Slice is one of his favourite Australian desserts, and this quick version is ideal for a quick and tasty picnic food, so this week Roy Creates Quick And Easy Vanilla Slice.
You will need:
- A packet of Sao or Lattice biscuits
- 600 millilitres of whipping cream
- A packet of Vanilla Instant Pudding mix (we used Cottees)
- Vanilla essence (to taste, we used about 1 teaspoon)
- Icing sugar
- 1 teaspoon of soft butter or margarine
- Passionfruit. You can use a can of Passionfruit if you can't get fresh.
Method:
- You first need to divide the instant pudding into two equal portions. If you are going to need a firmer vanilla slice, because it will be carried out of the fridge, you might want to add a bit more of the pudding mix to the slice. In this case, split the pudding so that about 2/3rds are included in the slice.
- Next, you need to line a slice tin with biscuits. You might need to carefully cut some of the biscuits in half to make them fit neatly.
- Pour a teaspoon of vanilla essence into the cream
- Whip the cream to firm peaks (Roy cheats and uses electric beaters, but you can do it by hand if you like)
- Fold in the instant pudding mix through the cream. Fold it carefully because you don't want to loose the air in the cream.
- Pour the cream over the biscuits and smooth then cover with another layer of the biscuits.
- Put the slice in the fridge to set while you make the icing.
- Make icing by combining the butter and icing sugar, and enough of the Passionfruit to make a good consistency.
- Spread the icing over the biscuits and set the slice back in the fridge to firm up (it doesn't take long, an hour will be fine)
- Take on your picnic (you need to keep it cool in the Esky). Slice and enjoy!
