Today, November 11th, is a very important day, Remembrance Day. It is the day when we remember war and those who died fighting for what they believed in. Yet usually when we commemorate Remembrance Day we think only of those who died in the First and Second World Wars. Roy thinks this is a shame though, as there are many other conflicts which Australian's have been involved in which should also be remembered. The recipe Roy decided to cook today commemorates the Boer War. Ladysmith was a town which was under seige during the Boer War, and when the seige was over a cake was created to celebrate. The cake was called Ladysmith Celebration Cake and Roy thought it would be a perfect cake for Remembrance Day. So this week Roy Creates Ladysmith Celebration Cake.
You Will Need:
- 180 grams of butter or margarine
- 180 grams of sugar
- 180 grams of plain flour plus 1 teaspoon more
- 3 eggs, lightly beaten
- 1 teaspoon of baking powder
- A bottle of good raspberry jam (we used 1/2 a cup in the end)
- 2 teaspoons of cinnamon
- 1/2 a cup of chopped walnuts
Method:
- Preheat the oven to 180 degrees and line a 7 inch square cake tin with baking paper. We didn't have a 7 inch pan, so we used a 7.5 one and cooked it for a slightly shorter time.
- Sift the flour (except the 1 teaspoon) and baking powder together
- Cream the butter and sugar together
- Beat the eggs and flour in, alternating some of the egg with some of the flour.
- Now, you need to divide the mix into two parts.
- Add the cinnamon and extra teaspoon of flour to one of the bowls of cake mix and then pour the mix into the bottom of the prepared cake tin.
- Warm the jam for 30 seconds in the microwave and give it a stir. If it isn't a spreadable consistency yet, heat it a little longer. You don't want the jam to be hot, just spreadable.
- Spread a thin layer of the jam over the uncooked cake mix. Try to cover the whole surface.
- Pour the other half of the cake mix over the top of the jam.
- Top the cake with the chopped walnuts.
- Bake for 1 hour or until a skewer inserted in the middle of the cake comes out clean.
- Enjoy! The cake is nice eaten warm, but is also very tasty cold.
