Recently, Roy has been doing quite a bit of entertaining, so he has been buying lots of savoury biscuits to have with dip and cheese. This leaves him with a bit of a problem though. In every packet, there are broken biscuits which he doesn’t put out for guests, and there are always biscuits left over at the end. What was he going to do with them? His Grandma suggested he try an old recipe she likes for tuna bake which uses crushed up savoury biscuits, and when he tried it he loved it. So this week, Roy Creates Tuna Bake Slice.
Note: This bake is good hot or cold. If you want to eat it hot, let it sit for a few minutes to set before cutting it. You can also take it on a picnic or in a school lunch box.
- 120 grams of savoury biscuits
- 1 cup of grated cheese
- 1 medium onion
- 425 gram tin of tuna, drained (Roy likes tuna in olive oil for this recipe, but use whatever you prefer)
- 3 eggs
- 1 cup of milk
- Salt and pepper to taste (Roy likes a little cayenne pepper in his, but you can use whatever you like)
Optional: Roy thinks this is really tasty with some vegetables added, and he likes to use a carrot, a zucchini, a stick of celery and a bit of red capsicum. If you don’t want to use vegetables, add about 2 teaspoons of parsley.
Method:
- Preheat the oven to 180 degrees celcius.
- Line a lamington tin with greased foil or baking paper.
- In a food processor, process the biscuits until they make fine crumbs. Pour them into a large bowl.
- Peel and roughly chop the vegetables. They don’t need to be finely chopped, big chunks will be fine (Roy cut his carrot into about 6 pieces for example).
- Put the vegetables (including the onion) into the food processor and process them until they are cut finely. Roy likes to put the carrot and onion in for a bit first as they are harder than the others.
- Add the vegetables, cheese and tuna to the biscuits and mix them together.
- Pour the cup of milk in and mix.
- Lightly whisk the eggs in a bowl (Roy likes to add his seasoning to them as well, as it makes sure it is evenly spread through the bake) and then add them to the bowl and mix.
- Mix everything together thoroughly.
- Pour the mix into the tin and smooth the top down.
- Bake for 45 minutes or until it is browned and set.
