This week, Roy really wanted to make a sweet treat which was easy to make and nice and light. The children have been talking about how much they like French macaroons which they can get in cafes with hot chocolate. So, I suggested that Roy ask his Grandma for her old coconut macaroon recipe, which is easy to make but utterly delicious. Though they aren't like the French ones which are so trendy today, they are a lovely little treat to go with hot chocolate. She was happy to oblige so this week, Roy makes coconut macaroons.
You Will Need:
- 1 cup coconut
- 1/2 cup sugar
- 1 tablespoon cornflour
- 1 egg
- A pinch of salt
- 1 teaspoon vanilla essence
- Optional: 2 or 3 red glace cherries.
Method:
- Preheat the oven to 180 degrees celcius.
- Prepare 2 trays by lining them with baking paper.
- If you choose to use them, cut your cherries into small pieces - Roy managed to get about 16 pieces from each cherry!
- Mix the coconut, sugar and cornflour in a bowl. Make sure they are well mixed!
- Using a fork, beat the egg, salt and vanilla in another bowl until the egg is well mixed.
- Add the egg mix to the coconut and sugar mix. Stir well until they are combined.
- Shape teaspoons of the macaroon mix into little mounds, like pyramids, and place them on the trays. They won't spread a lot so you can put about 12 to 16 on each tray. When they're all lined up they look like a little city!
- Put a little piece of red cherry on the top of each, if you wish.
- Bake for 7 minutes or until they are a light golden brown.
- If you didn't use baking paper, slide a knife or an egg flip under each to loosen them from the tray (they are delicate so you don't want them to be stuck when they cool down!)
- Let them cool on the trays.
- When they are cold, enjoy!
